'Manage Billing Documents' app is currently not supported to set a cancellation/billing date as required. As you mentioned already it automatically takes the original billing date as cancellation date by default (SAP Best Practice). There is no specific configuration to change this. The only alternative is to cancel the invoices via VF01 app if required.
