I checked the Fiori Library ( https://fioriappslibrary.hana.ondemand.com/sap/fix/externalViewer/# )

and the SSCUI Excel sheet Expert Configuration and SSCUI Reference.xlsm (SAP Customer) ( https://go.support.sap.com/roadmapviewer/#/group//roadmap/IMPS4HANACLDENMGMT/node/001999B7BD851ED68D... ) and currently the Customizing transaction OPSA for Project Profiles isnt available for S/4 HANA Cloud .

Please use the Customer Influence program at the link http://influence.sap.com if you would like for it to be included in the next quaterly release

In the Scope item https://rapid.sap.com/bp/scopeitems/932 it mentions the use of Project Profiles .

Does that answer your question or are you looking for a SSCUI / way to customise Project Profiles?

As enda.fennelly mentioned, currently there is no SSCUI available to configure project profiles. Feel free to use the SAP Customer Influence to submit an improvement request: https://influence.sap.com/sap/ino/#/campaign/1858
